Date Caramel Dip (Gaps, AIP, Paleo, Whole30)

Equipment

Ingredients

  • 8 large medjool dates pitted
  • salt pinch
  • 6 tbsp filtered water for your desired consistency
  • 1/2 tsp pure vanilla extract **Optional

Instructions

  • Begin by boiling some filtered water.
  • Remove the pits and the top of the date (the little remnant of the stem) with your fingers
  • Add pitted Medjool dates to a glass bowl or measuring cup and pour hot water on top.

  • Allow the dates and hot water to sit for 10 minutes to soften
  • Once soft (don’t pour out your hot water), use a slotted spoon or fork to remove your soaked dates and add them to a blender (I used a blender cup for this small batch)
  • Next, add 6-8 tablespoons of water to your soaked dates, along with optional vanilla extract and sea salt, and blend until you achieve a smooth and creamy consistency.
  • Serves 4

Notes

Store in a glass bowl or jar with a lid, and it should last in the fridge for 2 weeks.
