Remove the pits and the top of the date (the little remnant of the stem) with your fingers
Add pitted Medjool dates to a glass bowl or measuring cup and pour hot water on top.
Allow the dates and hot water to sit for 10 minutes to soften
Once soft (don’t pour out your hot water), use a slotted spoon or fork to remove your soaked dates and add them to a blender (I used a blender cup for this small batch)
Next, add 6-8 tablespoons of water to your soaked dates, along with optional vanilla extract and sea salt, and blend until you achieve a smooth and creamy consistency.

Store in a glass bowl or jar with a lid, and it should last in the fridge for 2 weeks.
