Gluten-Free Sheet Pan Lamb Meatballs

Simple and delicious gluten-free lamb meatballs for a quick dinner.

Equipment

  • 1 Sheet pan
  • 1 Mixing Bowl
  • 1 Scoop or 1/4 cup measurement
  • 1 Unbleached Parchment Paper

Ingredients

  • 1 lb ground lamb or 85% ground beef
  • 2 cloves garlic
  • 2 eggs
  • 1/2 large onion
  • 1 tsp dried parsley
  • 3/4 tsp smoked paprika
  • 1 salt *to taste I used 1 tsp
  • 3/4 cup almond flour

Instructions

  • Preheat oven to 375 degrees
  • Add lamb to a bowl
  • Dice ½ large yellow onion, mince 2 garlic cloves and add them to ground meat.
  • Add seasonings, and 2 eggs and combine.
  • add ¾ cup of almond flour
  • After combining everything use a 1/4 cup scoop or measuring cup and form meatballs
  • Add each meatball to a parchment-lined baking sheet. Give each meatball space between
