Turn the Instant pot on the sautee function
Add ground beef and seasonings and brown the meat until done, then turn off (by hitting Cancel)
Peel and dice butternut squash or sweet potato into 1-inch cubes. Dice or chop 1 large zucchini
Chop fresh cilantro, including stems, and then set aside.
Once the beef has browned, add in cubed butternut squash, cilantro, and onion, and top with 4 cups of broth and stir.
Put on the Instant Pot lid and follow the manufacturer's directions to lock and secure the lid if needed.
Pressure cook on high for 25 minutes. You can use a large stockpot and follow all the steps above. Cover and simmer until potatoes or butternut squash are fork-tender.
When time is done, be sure to vent the steam (Follow your Instant Pot's directions)
Remove lid, fill bowls, top with optional avocado, fresh cilantro, and diced onions.
