This is one of my family’s favorite hearty meals. These gluten-free sheet pan lamb meatballs are also grain-free and pair so well with mashed potatoes. Sometimes meat and potatoes just make the most comforting and filling meals. But, we are keeping things gluten-free, packed with protein, and will feed a family of 3-4.
A stainless steel bowl and a few utensils are all that you need for these sheet pan meatballs.

Making the Lamb Meatballs
I love ground lamb for these meatballs but you could always substitute ground beef. I would use an 85/15 mix so you don’t end up with dry meatballs. Using ½ ground beef with ½ ground pork would also work to get a similar flavor profile and juicy texture.
Almond flour is used as our “breadcrumbs” and add a bit of protein as well.
Smoked paprika, garlic, and fennel are what give these an amazing flavor that is a bit reminiscent of sausage.
You will need a few simple ingredients to make these easy and delicious sheet pan meatballs.
- Ground Lamb
- Eggs
- Smoked Paprika
- Fresh Garlic
- Onions
- Dried Parsley
- Fennel Seeds
- Almond Flour

Gluten-Free Sheet Pan Lamb Meatballs
Equipment
- 1 Sheet pan
- 1 Mixing Bowl
- 1 Scoop or 1/4 cup measurement
- 1 Unbleached Parchment Paper
Ingredients
- 1 lb ground lamb or 85% ground beef
- 2 cloves garlic
- 2 eggs
- 1/2 large onion
- 1 tsp dried parsley
- 3/4 tsp smoked paprika
- 1 salt *to taste I used 1 tsp
- 3/4 cup almond flour
Instructions
- Preheat oven to 375 degrees
- Add lamb to a bowl
- Dice ½ large yellow onion, mince 2 garlic cloves and add them to ground meat.
- Add seasonings, and 2 eggs and combine.
- add ¾ cup of almond flour
- After combining everything use a 1/4 cup scoop or measuring cup and form meatballs
- Add each meatball to a parchment-lined baking sheet. Give each meatball space between
- Bake for 25 minutes
