Ingredients

  • 1 Cup Almond Flour
  • 1 Tbsp Milled Flax Seeds
  • 1/2 Cup Arrowroot flour sub tapioca
  • 1/4 Cup Coconut Flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 Cup Coconut Sugar sub cane sugar
  • 1/4 Cup Almond Milk sub favorite milk alternative
  • 2 Large Eggs
  • 1 tsp Pure Vanilla Extract can sub almond extract
  • 2 very ripe bananas
  • 1/2 Cup blueberries can use fresh or frozen

Instructions

  • Add all dry ingredients to a bowl except milled flax seeds and mix
  • Add wet ingredients almond milk, vanilla, almond milk, eggs, and flax seed. Mix and set aside
  • Add two overripe (with brown spots) to a bowl and smash with a fork.
  • Mix wet ingredients to smashed bananas
  • Mix wet and dry ingredients
  • Fold in Blueberries
  • Add to 12 tin muffin pan and bake for 25 minutes at 350 degrees
