You are going to love these easy and healthy Paleo Banana Blueberry Muffins. I don’t know about you but I don’t always want to eat breakfast. But if there is something healthy and quick that is ready to eat that prevents me from skipping breakfast.

These muffins are healthy but can be eaten as a dessert, snack, or breakfast that you can easily grab on your way out the door with your morning coffee.

The muffins are refined sugar free as well as oil, dairy, grain, and gluten-free.

Banana Blueberry Muffins – Grain-free Dairy-Free (Paleo)

Simple Banana Blueberry muffins that are perfect for on the-go snacking, breakfast, or dessert.

Ingredients
  

  • 1 Cup Almond Flour
  • 1 Tbsp Milled Flax Seeds
  • 1/2 Cup Arrowroot flour sub tapioca
  • 1/4 Cup Coconut Flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 Cup Coconut Sugar sub cane sugar
  • 1/4 Cup Almond Milk sub favorite milk alternative
  • 2 Large Eggs
  • 1 tsp Pure Vanilla Extract can sub almond extract
  • 2 very ripe bananas
  • 1/2 Cup blueberries can use fresh or frozen

Method
 

  1. Add all dry ingredients to a bowl except milled flax seeds and mix
  2. Add wet ingredients almond milk, vanilla, almond milk, eggs, and flax seed. Mix and set aside
  3. Add two overripe (with brown spots) to a bowl and smash with a fork.
  4. Mix wet ingredients to smashed bananas
  5. Mix wet and dry ingredients
  6. Fold in Blueberries
  7. Add to 12 tin muffin pan and bake for 25 minutes at 350 degrees
