Dairy-Free Beef Stroganoff (Gluten-Free, One-Pot, Hamburger Helper Style)

This Dairy-Free Beef Stroganoff is a cozy, family-friendly meal that’s gluten-free, made without any cream or cheese, and tastes just like a homemade Hamburger Helper—but better!

Ingredients

  • 1 lb grass-fed ground beef
  • 1 10- oz bag frozen broccoli florets or 3 ½ cups broccoli florets
  • 2 cups gluten-free pasta or chickpea pasta
  • 2 tbsp avocado oil
  • 2 tbsp gluten-free flour or cassava flour
  • Sea salt - to taste
  • 1 tbsp organic Worcestershire sauce or sub coconut aminos
  • ½ small diced white or yellow onion or 1 tsp ground onion powder
  • 1 tsp Italian seasoning
  • 1 cup dairy-free milk
  • ¼ cup dairy-free cheese shreds cheddar
  • 1 clove minced garlic optional
  • 2 1/2 cups Filtered water

Instructions

  • Start by adding 2 tablespoons of avocado oil to a pan, allowing it to heat up for a minute.
  • Next, add in gluten-free flour by sprinkling it over the top of the oil

  • Using a whisk or spoon, mix flour into the oil until it begins to brown slightly
  • Add 1 cup of dairy-free milk, along with salt to your preference to this mixture and stir/whisk until it begins to bubble slightly.
  • Add diced onion or onion powder and an optional minced garlic clove or garlic powder.
  • Add in “cheese” (dairy-free) shreds and stir until combined.

  • Add in 1 lb of ground beef and cook through (about 7 minutes)

  • Add 2 cups of GF noodles and mix in

  • Add 2 ½ cups filtered water, mix to combine, lower to medium-low heat, and cook covered for about 12 minutes
  • Check it after about 6 minutes and mix if necessary. Recover, depending on your stove, you may need to turn it down further.
  • It should be at a nice even simmer
  • After 12 minutes, scoop off any additional oil produced by the beef and remove it.

  • Add the frozen broccoli florets, or Mushrooms, mix in, and cook uncovered for 3 more minutes, or until the broccoli is no longer frozen and everything is cooked through.

Notes

You can use any dairy-free milk that you like. I used unsweetened coconut milk. It has a great creamy texture, but unsweetened almond milk will also work.
You can add any vegetable that you like, but if you want more of an authentic Stroganoff flavor, go with sliced mushrooms.
To add a bit more protein and fiber, you can use bean pasta.
If you don't have Worcestershire, you can use coconut aminos for that umami flavor.
You can use a vegan cream cheese if you prefer, or 1 tablespoon of nutritional yeast for a cheesy-like flavor.
