Gluten-Free Egg-Free Mini Meat Loaf

Simple gluten-free mini meatloaf is a quick recipe to prepare and perfect for meal prep. The secret ingredient is a binder that keeps the loaves moist, and no eggs or grains are necessary.

Ingredients

  • 1 lb ground lamb
  • 1 lb ground 93% lean ground beef
  • 1/2 cup potato flakes dehydrated potato
  • 1 tbsp Worcestershire sauce or sub Coconut Aminos
  • 1 tsp ground oregano or 1 1/2 tsp dried oregano
  • 1 tsp ground rosemary or 1 1/2 tsp crushed rosemary
  • sea salt to taste
  • 1 tsp dried parsley

Instructions

  • Preheat oven to 375 degrees
    Add ground lamb and ground beef to a bowl
  • Add Worcestershire sauce, sea salt, ground rosemary, ground oregano, and dried parsley and mix until combined
  • Add in potato flakes
  • Add parchment paper to a sheet pan and set aside
  • Form 8 equal oblong balls of the mixture and add to sheet pan
    Eight small meat loaves sprinkled with parsley on top of parchment paper
  • Top with dried parsley
  • Place the pan in a preheated 375 degree oven and bake for 35 minutes or until your preferred doneness is reached
