Ingredients

  • 8 medium red-skinned potatoes
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • black pepper to taste preference
  • sea salt to taste preference

Add to Instant Pot

  • 1/2 cup filtered water
  • 1/2 tsp dried onion optional minced garlic
  • sea salt * I added 1/2 tsp add salt to your preference

For the Dressing

  • 3 tbsp Olive Oil
  • 1 tbsp yellow mustard
  • 1 tbsp rice vinegar
  • 1 tsp organic sugar

Instructions

  • Begin by peeling red-skinned potatoes and rinse well
    peeling red skinned potatoes with a vegetable peeler
  • Cut into equal-sized pieces
    large knife cutting potatoes in cubes on a large dark wooden cutting board
  • Add 1/2 cup filtered water to the bottom of the Instant Pot
  • Add cubed potatoes to the Instant Pot
  • Add salt to taste ( I added 1/2 tsp sea salt)
  • Add in 1/2 tsp dried onion or onion powder
  • Add optional diced garlic clove or 1/2 tsp garlic powder
  • Cover with lid and set to high pressure cook for 4 minutes
