A few helpful tips

  • Dairy-free Swaps: I used coconut milk, but you can use any plant milk that you prefer, but make sure it’s unsweetened.
  • Fats and Oils: Olive oil works for the Mushroom gravy, as does coconut oil *use refined coconut oil for a more neutral flavor, but I find that it imparts a slightly “buttery” flavor. You could also use a healthy shortening, ghee, or butter, if you are not dairy-free. Use avocado oil for frying because it has a higher smoke point.
  • Flour swaps: Cassava flour is a good swap if you don’t have gluten-free all-purpose flour. For the mushroom gravy, you can use tapioca flour, but it will change the consistency. If you use tapioca flour, make a slurry first. Mix a little of the broth with some tapioca flour, then add it to the mushrooms to make the gravy. Use equal parts. Tapioca thickens with heat, but stir constantly so it doesn’t get gummy.
  • Flavorings: This recipe uses avocado oil mayo to give it a creamy tang that is very reminiscent of sour cream, which most traditional recipes use. You could leave this out or use dairy-free sour cream! The Worcestershire sauce (here’s another option for Worcestershire) can be substituted with coconut aminos or soy sauce if you are not soy-free.
  • Skip a Step: If you have a good brand of gluten-free fried onions, feel free to use those. I just love the benefits of homemade fried onions so I can control the ingredients and eat a preservative-free food. Onions contain quercetin, which is a great 1.antioxidant and anti-inflammatory.
  • Use frozen green beans: You could use frozen organic green beans, or any frozen green beans that you like. Just add them to the gravy mixture. You may need to alter the liquids by reducing just a bit. Let me know if you try it this way and please report back!
