A quick Vegetable and vinaigrette salad recipe

This recipe was technically created by my Husband, I must admit. We wanted to eat more raw vegetables but I was so tired of throwing out Organic Spring Mix.
A salad with a bit of crunch that wont fall apart after i add a little dressing is my favorite. Raw vegetables hold up so well to a simple vinaigrette, unlike regular lettuce. During the hotter Summer months lighter fare is definitely in season. I don’t want to feel weighed down, and a salad is one of the best sides for heavier food.
Buying a large container of the Organic Spring Mix salad, to only have to throw it out is no fun. It ends up in the trash for a few reasons.
- It’s not our Favorite type of salad green
- It wilts quite easily
- It doesn’t hold up to dressing beyond a 30 minute time frame
- We don’t want the inconvenience of carrying a separate container for salad dressing

This salad that my Husband suggested was so easy and smart. He simply said, “why do we need Lettuce in our salad at all?” I mean, duh Cheriesse, why do you keep tortoring yourself with begrudgedly eating that spring mix anyway.
So he suggested leaving it out, making the dressing simple and sticking to some hearty vegetables. So that is the back-story on how this salad came to be. We love it because the ingredients are nothing special. So they can easily be found in most Grocery stores, or farmers markets. It’s inexpensive, and it lasts for several days.
You can swap out any ingredients that you don’t like or can’t find. I would just suggest keeping it simple and using vegetables that will hold up well after being dressed. So here is the recipe, I really hope you can try it and let me know if my Husband was right! He will be so excited!
Simple Vegetable and vinaigrette Salad
Ingredients
- 2 tsp Italian seasoning
- Salt and Pepper to taste
- 2 Cloves Garlic
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1/2 Lemon
- 1/2 cup Olive Oil
- 1/2 cup Apple Cider Vinegar
Produce
- 2 bunches Radish
- 1 English Cucumber
- 1 + 1/2 cup Match Stick Carrots
- 1 pint Grape Tomatoes
- 1 head Broccoli Florets
Instructions
- Wash, Cut, and dry the Cucumber, Radish, and Broccoli. Keep all other Vegetables whole. Mince 2-3 garlic cloves and squeeze the juice of 1/2 lemon into a bowl. Add all remaining ingredients to the same bowl and whisk. Pour over vegetables and toss.

I made some Organic Chicken wings in the Air Fryer (one of the best kitchen gadgets ever)! I made them with a dry rub seasoning mix. We ate them with this salad which really kept it all light.
