Grain-Free Gluten-Free Chicken Nuggets
You are going to love these grain-free gluten-free chicken nuggets. These chicken nuggets won’t dry out because we’re not using chicken breasts. They are chewy with bits of crispy texture and perfect for freezing for later, dipping in sauce and satisfying that fast food craving, but we’re keeping it healthy!
I don’t know about you but sometimes I really want a {fast-food like} chicken nugget. But as a Nutritionist I want to keep it healthy. If you have kids this recipe fills that chicken nugget desire but it is much healthier! Kids will love this and you won’t have to go through the drive through.

You can make a batch and freeze them for popping in your microwave or air fryer to reheat. If you have about 30 minutes you can make a batch large enough to feed a crew. Pair it with a dipping sauce like one of these or my favorite buffalo sauce and ranch. Add a couple sides like I did below and dinner is done!
The best part is it can be baked, or air-fried and you only need a couple ingredients.

How to Make Grain-Free Gluten-Free Chicken Nuggets
So how do you make these healthy grain-free gluten-free chicken nuggets? It is super simple and you will only need a few simple ingredients and spices. You can make these in an air fryer or right in the oven.

Ingredients you will need for this recipe:
- 6 Boneless skinless chicken thighs
- Tapioca Flour/Starch or Arrowroot Flour/Starch
- Ground Turmeric *this ingredient adds a beautiful golden color and antioxidants
- Salt
- Black Pepper *black pepper is needed to utilize and absorb the health benefits of turmeric
- Garlic Powder
Equipment you will need for this recipe:
- Kitchen Scissors or a knife
- Cutting Board
- Measuring cup
- Mixing Bowl or freezer bags (like ziploc)
- Tongs or disposable gloves
- An Air fryer or Sheet pan
- Parchment (if using the oven method)
Steps for Making Air Fryer Grain-Free Gluten-Free Chicken Nuggets
If you opt for the air fryer method (this is the one I use) you will need to make two batches and this will make your cooking time a little longer. If you have a larger capacity air fryer it wont take as long. Either way the air fryer will make these so easy, and lead to a nice texture on these chicken nuggets.
- preheat your air fryer to 380 degrees or oven to 425 degrees and line a sheet pan with parchment paper
- take 6 boneless skinless chicken thighs and use kitchen scissors or a knife to remove most of the fat
- cut up bite-sized pieces of your chicken thighs
- add all dry ingredients to a bag or mixing bowl (I use stainless ones with a lids)
- add 1/2 of your your chicken thigh pieces to the dry mix and shake (seal bag and shake if you’re using a bag) mix in your bowl with tongs or add to a bowl with a lid and shake until coated
- add each piece with a little space between to a parchment lined pan

Grain-Free Chicken Nuggets
Equipment
- 1 Large Sheet Pan
- 1 parchment paper
- 1 large mixing bowl or bag
- 1 pair of tongs
- 1 kitchen scissors or knife
Ingredients
- 6 whole boneless skinless chicken thighs
- 1 tsp salt * or to taste preference
- 1/4 tsp ground black pepper
- 1/2 tsp ground turmeric
- 1/3 cup tapioca flour/starch or arrowroot flour/starch
- 1/2 tsp garlic powder
Instructions
- preheat oven to 425 degrees and place parchment paper on a large sheet pan or roasting pan
- use kitchen scissors or a knife to remove fat from each chicken thigh
- cut up boneless chicken thighs into bite-size chunks
- add all dry ingredients turmeric, pepper, salt, and tapioca flour to a freezer bag or large mixing bowl
- add cut chicken to seasoned flour mixture and coat all pieces of chicken
- remove with tongs and shake any excess flour mixture off and add to your baking sheet with a little space between each piece
- bake at 425 degrees turning each nugget over after 15 minutes
- cook until internal temperature reaches 165 degrees
Notes
Check internal temperature to reach 165 degrees for doneness. + If you have a larger air fryer it will not take as long since you can make this is one batch.
