I just shared a super quick and healthy instant pot meal on my You Tube channel. Being Quarantined means that we are all eating more at home. That can get expensive if you are not careful/ intentional.
Eating more vegetables and getting my family to eat healthy is always my goal. However, I don’t want to be in the kitchen all day long. This is a quick and inexpensive meal that basically cooks itself. Use what you have, don’t complicate it and enjoy!
Quick and Healthy Instant Pot Meal

Ingredients
- 1 Bag Frozen Mushrooms or [16 oz fresh]
- 1 Bag Frozen Stir Fry Vegetables
- 1 Large Chicken Breast (I simply shredded chicken from a leftover roast chicken) or Your favorite protein (Ground Turkey or Ground Chicken are great in this dish)
- 1 Container Chicken or Vegetable Stock
- ½ Head of Small Cabbage or [use dry Cole Slaw Mix]
- 1-2 inches fresh ginger or [1 teaspoon Ground Ginger]
- 1 Tablespoon Sesame oil or [light tasting oil coconut oil works well]
- ¼ Cup Coconut Aminos or [use Soy Sauce]
- Salt to taste
Directions
- Slice the Ginger and Garlic or use a Grater
- Add all ingredients to Stock pot and Simmer
- or Instant Pot use the “Soup” button or cook timer for 10 minutes
Don’t complicate it. Use what you have

Quick and Healthy Instant Pot Meal
Use what your family likes for this recipe. If no one likes broccoli simply use something else. I made this recipe several times now and I have used a different protein each time.
Ground Turkey is possibly my favorite so far. But feel free to use whatever you have. That’s what makes this recipe so good. This time I used some chicken breast leftover from a roasted chicken the night before.
You could use the same concept with a rotisserie chicken from your local grocery store. I hope you try this recipe and love it.
