Smoky Beef and Butternut Squash Soup (Instant Pot)

This smoky beef and butternut squash soup comes together in under 30 minutes using the Instant Pot. Make this cozy soup with simple ingredients like ground beef and butternut squash for an easy and cozy meal.

We like to top it with avocado, cilantro, and onion and serve it with my Masa Harina Gluten-free Cornbread. Rolls also work well here; try these gluten-free dinner rolls made without rice flour.

Smoky Beef and Butternut Squash Soup (Instant Pot)

Ingredients
  

  • 1 lb ground beef
  • 4 cups butternut squash sub sweet potato
  • 1/2 cup fresh cilantro chopped including stems
  • 4 cups broth use chicken, vegetable, or beef stock, or bone broth
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 clove minced garlic Optional or 1/2 tsp ground garlic powder
  • 1/4 cup diced onion optional or 1 tbsp dehydrated onion, or 1 tsp ground onion powder

Equipment

  • Pressure Cooker (Instant Pot)
  • Knife
  • Cutting board
  • Measuring Spoons

Method
 

  1. Turn the Instant pot on the sautee function
  2. Add ground beef and seasonings and brown the meat until done, then turn off (by hitting Cancel)
  3. Peel and dice butternut squash or sweet potato into 1-inch cubes.
  4. Chop fresh cilantro, including stems and set aside.
  5. Once the beef has browned, add in cubed butternut squash, cilantro, and top with 4 cups of broth and stir.
  6. Put on the Instant Pot lid and follow the manufacturer’s directions to lock and secure the lid if needed.
  7. Pressure cook on high for 25 minutes.
  8. When time is done, be sure to vent the steam (Follow your Instant Pot’s directions)
  9. Remove lid, fill bowls, top with optional avocado, fresh cilantro, and diced onions.
