Whole 30 Sweet Potato Breakfast Bowl

This Whole30 compliant sweet potato breakfast bowl is so delicious, easy, and has a plant-based protein source! I literally made this recipe partly by accident and partly from breakfast boredom.
Back when I did whole30 I got really tired of eggs and didn’t always want a savory breakfast. But I did want my breakfast to be quick, delicious and high enough in protein to keep me satisfied.

Since I still eat Whole30, and Paleo type foods this worked so well for my mornings!
I’m always looking for a way to Not have animal products at every meal, though I am not vegan. I like to get in a good bit of protein without always relying on just meat and eggs.
It starts super easy and there is really no way to mess it up. Many of these ingredients you may already have on hand. There are no sugars added and the sweetness comes from the raisins, cinnamon, and sweet potato. But if you are not avoiding sugar this would be great with Pure Maple syrup, honey, coconut sugar, or cane sugar. The protein comes from Hemp hearts and you can find them here. You get 10 grams of protein for one serving.
Paleo, Whole30, Vegan Sweet Potato Breakfast Bowl
.It starts with your favorite apple, I love organic Granny Smith and Pink Lady apples. Add diced apple of choice in a small pot with 1/2 tsp cinnamon and 1/4-1/2 cup of water.
Simmer apples until tender. Once tender add 1 Tablespoon of Chia Seeds
After adding Chia seeds, simmer for 1 minute, remove from heat and add 1 Tablespoon of raisins, and 3 Tablespoons of Hemp hearts.



Whole30 Paleo Vegan Breakfast Bowl
Add previously cooked sweet potato (I used a small leftover roasted potato) and warm it in the microwave with 1/4 cup Unsweetened plain Almond milk.



For the last step add items in a bowl side-by-side or on top of the sweet potato mixture. Add raw pecans (you can chop these or leave them whole) on top and enjoy!

Ingredients
- 1 small apple use your favorite
- 1/4 – 1/2 cup water
- 1 Tbsp chia seeds
- 1/4 – 1/2 tsp Ground Cinnamon
- 1 Tbsp Raisins
- 2 Tbsp Pecans raw
- 3 Tbsp Hemp hearts
- 1 Small Roasted sweet potato
- 1/4 cup unsweetned almond milk
Instructions
- Core and chop a small apple and add to a small pot with 1/4 cup water
- Add cinnamon to pot with apple and allow to simmer until tender
- Simmer apples until tender. Once tender add 1 Tablespoon of Chia Seeds
- After adding Chia seeds, simmer for 1 minute
- Remove from heat and add 1 Tablespoon of raisins, and 3 Tablespoons of Hemp hearts
