Beef and Summer Squash Skillet

This beef and summer squash skillet has been the meal that I have on repeat this summer. It’s perfect to use zucchini and squash that are in season or possibly abundant in your garden. It combines simple and delicious flavors that get you in and out of the kitchen within 20 minutes or so.

I love the health benefits of this meal and the simplicity of it as well.

Health Benefits of Beef and Squash Skillet

Zucchini contains antioxidants, minerals like manganese and magnesium that support things like healthy bones, and potassium, which supports nerve function and blood pressure.

Summer squash also contains vitamin C, vitamin B6, and vitamin K.

It has a great bit of water, so it’s hydrating in the hot summer months and it also contains fiber for healthy digestion and gut health.

It’s also low on the glycemic index while also providing fiber to support healthy blood sugar regulation.

Ground beef is a complete protein with Omega 3’s (which are much higher in grass-fed cows). Omega-3 fatty acids aid in our body’s inflammatory response and helps to maintain a healthy response to inflammation in the body.

You can feel good about feeding this meal to your family. It’s healthy and quick!

Ingredients and Tools for Beef Skillet

  • Ground beef (80/20)
  • Zuchinni and Squash (or choose your favorite)
  • Worchestire sauce
  • Dried Basil (or fresh)
  • Dried Parsley
  • Dried Onion or Fresh
  • Scallion
  • Smoked Paprika
  • Sea salt
  • Optional Garlic (fresh or ground dried garlic)

Steps to Make Beef and Summer Squash Skillet

Begin by adding your ground beef to a skillet and add seasonings, salt, paprika, basil, parsley, sea salt, dried or fresh onion, and saute.

While that cooks, clean and chop your summer squash. I love using this Vegetable Slap Chop gadget. However, a cutting board and knife work just fine, this just makes things quicker!

When the ground beef has browned, add in your diced squash, (optional garlic), scallions, Worcestershire sauce, and sauté.

Cover with a lid and reduce heat to medium and allow to cook for 10-15 minutes.

Check after 8 minutes to stir and replace lid to continue to cook.

Once done add to a bowl and serve. We love to enjoy this meal with Gluten-Free Cornbread.

This will store in your fridge for 3 days.
